Garden Delight Hash
Zucchini, Yellow Squash, Potatoes, Onion, Green Pepper, Banana Pepper, Hamburger, Tomato
cut up and fried in an electric skillet. Salt, pepper, garlic powder, to taste.

I used ¼ to ½ lb of hamburger, fried until brown, seasoned with salt, pepper & garlic powder. Next I cut up about 4-5 medium pre-cooked potatoes and stirred into the hamburger. I would cook this for about 5 minutes. While the potatoes are cooking, cut up 1 zucchini, one yellow squash, an onion, ½ of a green pepper, one banana pepper and stir these into the potato hamburger hash. Again, you may want to season with a little more salt, pepper & garlic powder. Cut up one tomato or use ½ pint of stewed tomatoes, drained. Stir this into the hash mix and cook for another 5 minutes.

You can vary this by using pre-cooked chicken instead of the hamburger. I have even used beef hotdogs. Another variation is to leave out the potatoes and cook noodles or rice on the side. You could use different seasonings such as sage, thyme or oregano or whatever. Best to experiment to see what your family would like. Don't tell your children that it has peppers and onions, most children will turn their noses up before they even taste it.

If you don't like stewed or fresh tomatoes, you could substitute canned tomato paste or soup. I always used the stewed or fresh. I also would make a full skillet of this and freeze the leftover for another quick meal.
